My husband and I recently visited friends who have moved to Parker, Colorado, USA. They have a beautiful new home with a lovely outlook. One evening during our visit we all fancied going out for a Mexican meal, but did not want to travel far. They suggested Casa Mariachi in the Parker Marketplace Shopping Center. We had never been there before, but we do enjoy Mexican food and were told the restaurant has a great special on a house margarita on weeknights.so we were willing to give it a try.
It was mid-week, well,a Monday evening, so the restaurant was not busy but our friends did mention that it can be difficult to get in on a Friday or Saturday without a reservation.
We arrived at the brightly coloured restaurant and were shown quickly to our table by a friendly hostess. Indeed, we found everyone working there to be really friendly and helpful. We were promptly served nachos and a red salsa dip which was fine, but not magnificent. However, since this was our first time at Casa Mariachi, but, hopefully, not our last, I hope, we took our time looking at the extensive menu. I found a few things on the menu that I rarely see in other Mexican restaurants such as the “ropa vieja”. Ropa 
Vieja is Spanish for “old clothes” and is a Mexican dish consisting of beef with vegetables.
We all chose different things. I had a vegetarian burrito. it was delicious, but far too big a portion for me to finish, with my husband had a plate of beef enchiladas which was served with black beans, rice and a small portion of guacamole all were cooked very nicely. He was very hungry and thoroughly enjoyed his meal. He cleaned his plate. One of our friends had the chicken burrito while the other chose the soft tortilla. Our friends have tried many things on the menu and have not had anything that they did not enjoy. 
It is certainly my favorite place to get Mexican food in Parker too. Casa Mariachi is located in an old building that used to be a burger restaurant. We were in Parker and Casa Mariachi was recommended by our friends. However, even if it had not been so convenient, this restaurant served good food and we enjoyed eating at Casa Mariachi.
The restaurant offered us great food and good service at competitive prices. Casa Mariachi was easy to find and lots of parking spaces. We had a lovely evening and will be back to try other items on this menu and highly recommend this restaurant.
